Buy your Parmigiano-Reggiano in a two-pound chunk Grate Parmigiano-Reggiano before using.  Break off chunks of Parmigiano-Reggiano and pair with traditional balsamic vinegar from Modena.  Buy the very best Parmigiano-Reggiano you can find.  If you don't have a great local source check out Zingermans, and Formaggio Kitchen--they both sell quality Italian cheese, among other products.
