4 oz finest quality bittersweet chocolate (70%)3
1/3 cup extra virgin olive oil
3/4 cup superfine sugar
1/2 cup plus 1 tablespoon soft wheat flour
1/8 teaspoon salt
1 tsp vanilla
1/2 cup chopped walnuts (optional)
1 cup unsweetened whipped cream (optional)
Preheat the oven to 350.
Melt chocolate (over hot water or in microwave) and whisk in extra virgin oil. Cool. Line an 8”x8” baking pan with parchment paper that’s larger than the pan by 2”. Mix the flour with the salt. Beat the eggs and sugar until pale, thickened, around 5 minutes. Add the vanilla and chocolate mixture and combine well. Fold in the flour and optional walnuts.
Bake for 22-26 minutes. Top will be dry, toothpick will be wet. Cool completely, then cut into squares, using a knife with a serrated blade. Serve with whipped cream.
