makes about 8 portions

1 ½ cup superfine sugar 3 eggs

teaspoon lemon zest 1 teaspoon orange zest

cup whole milk ¾ cup extra virgin olive
oil
2 ½ cups soft wheat flour(White Lily or cake flour)
2 ½
teaspoons baking powder ¼ teaspoon salt

Preheat the oven to 350 . Oil and flour a 10 " springform pan. I like
to clamp a large piece of parchment paper over the bottom piece to make
removing the cake easier.
2 Beat the eggs, sugar and zest for
at least 5 minutes with a mixer until pale yellow and thick.

Mix in the milk and oil. Mix the flour, baking powder and salt
together to blend and fold into the liquid until thoroughly combined.

Pour batter into the springform pan and bake for 35-45 minutes or until
brown and a tester inserted in the center comes out clean. Remove from
oven, cool for 10 minutes, run a knife around the edge of the pan and
remove the ring of the springmold. Cool completely and serve.
