Tre Tre Tre cake

TRE TRE TRE

makes about 8 portions                                    dessert

1 ½ cup superfine sugar                   3 eggs
1 teaspoon lemon zest                      1 teaspoon orange zest
¾ cup whole milk                                ¾ cup extra virgin olive oil
2 ½ cups soft wheat flour(White Lily or cake flour)
2 ½    teaspoons baking powder         ¼ teaspoon salt


1 Preheat the oven to 350 . Oil and flour a 10 " springform pan.  I like to clamp a large piece of parchment paper over the bottom piece to make removing the cake easier.


2 Beat the eggs, sugar and zest for at least 5 minutes with a mixer until pale yellow and thick.


3 Mix in the milk and oil.  Mix the flour, baking powder and salt together to blend and fold into the liquid until thoroughly combined.


4 Pour batter into the springform pan and bake for 35-45 minutes or until brown and a tester inserted in the center comes out clean.  Remove from oven, cool for 10 minutes, run a knife around the edge of the pan and remove the ring of the springmold.  Cool completely and serve.
